What ingredients do I need to make the perfect honeycomb candy at home?

You will be needing sugar, that will caramelize and be the base of your candy. The honey will be providing color and flavor to the candy.

The baking powder gives the candy its honeycomb structure. This will react with caramel and create tons of air bubbles.

In case you are wondering, why do you need to dip it in chocolate? Let me explain using some science. If you leave the sugar out for some time, it will absorb moisture from the air and become moist and soggy. Now think about the candy which is 100 percent sugar. Yep, it will absorb moisture from the air and become a soggy mess and sticky mess.

You need to dip it in chocolate for that reason. It protects the candy from becoming sticky.

How to make this perfect honeycomb candy at home?

Take a plate or a tray and line it using a silicon mat. In case you don’t have a silicon mat, grease the tray using oil.

Take a large pan, because the mixture will boil and rise up, so make sure you are using a big enough saucepan. You will be handling hot sugar, so make sure you are safe.

In the pan, add sugar and honey and start cooking. Stir continuously, preferably using a wooden ladle.

Make sure the sugar melts evenly. In case you see one spot becoming darker brown, stir and shift some sugar crystals there.

We want the sugar to melt and turn into golden amber color like the image shown below.

If you have a sugar thermometer that should be around 150- 155 degrees Centigrade or 302-311 degrees Fahrenheit.

In case you don’t have a sugar thermometer, simply eyeball the color.

Remove from flame and add baking powder.

Stir immediately. The mixture will start bubbling vigorously and rise up, so make sure your hands are away from the pan.

It will rise up in seconds, make sure you stir the baking powder well.

Pour the mixture onto the lined or greased tray while it’s hot and bubbling.

Do not tap the tray to flatten the mixture as that will reduce the size of air bubbles.

Leave it uncovered to set in a cool and dry place. It will take about thirty minutes to completely cool down and set.

In a bowl, melt some dark chocolate.

Now, the fun part, break the candy into pieces of your desired size.
