Common Brownie Fails and How to fix them

In all my blog posts, I share the whys and hows of baking and dessert recipes. But sometimes you may end up making mistakes and that’s okay. It’s the best way to learn, but I don’t want you to be scared of making mistakes. In this blog post, I will talk about common brownie fails and how to fix them. Fudgy brownies are all we want and I will make sure you get that.

Why are my brownies dry and crumbly?

  • Overbaking the brownies makes your brownies dry and crumbly as most of the moisture is gone during baking.
  • Not using the correct recipe may result in dry and crumbly brownies. Recipes that have a lesser amount of fat and moisture content will not make a fudgy brownie.
  • Not resting the brownie enough before cutting will result in the brownies crumbling. This is because they need time to cool down and solidify.

Why are my brownies sticky?

  • High oven temperature may result in the sides and top of the brownies baking faster than the center resulting in hard side edges and a sticky center. The only sticky center you deserve is the creaminess of peanut butter swirled into brownie batter. Sounds like heaven right? Why are my brownies sticking to the parchment paper?

  • You may have used the wrong side of the parchment paper. Use the shiny side to pour the batter on.
  • Your brownies are underbaked. When you place a skewer inside to check, the skewer should have bits sticking to it. The sides should be firm but the center should be soft to the touch. That’s when you know your brownies are done.
  • After an overnight rest, Turn the brownies upside down and use a hair dryer or a heat gun to heat the parchment paper. The fat in the brownies tends to cool down and make the brownies stick to the parchment. Heat melts the fat and releases the parchment paper from the brownies easily. Make sure you don’t heat it too much.

Why are my brownies chewy?

  • Overmixing the batter results in gluten development and results in chewy brownies.
  • Addition of brown sugar results in a chewy brownie, to avoid chewy brownies, remove brown sugar.

Why are my brownies still runny in the middle?

  • Underbaked brownies will feel runny in the middle. When you place a skewer inside to check, the skewer should have bits sticking to it. The sides should be firm but the center should be soft to the touch. That’s when you know your brownies are done.
  • Not preheating your oven will result in lower temperatures initially when you start baking the brownies.

Why are my brownies sinking in the middle?

  • Overmixing the batter results in sinking in the middle of brownies. Avoid beating the sugar and eggs using a whisk or beater. Always use a spatula to avoid over-mixing.
  • Underbaked brownies will sink in the middle. When you place a skewer inside to check, the skewer should have bits sticking to it. The sides should be firm but the center should be soft to the touch. That’s when you know your brownies are done.

Why are my brownies bubbling on top?

  • Overmixing the batter results in the bubbles on top. Avoid beating the batter using a whisk or beater. Always use a spatula to avoid over mixing. Even when using a whisk to fold the flour in, be gentle and avoid vigorous beating so that you don’t end up adding air bubbles to the batter.

Why does my brownie taste eggy?

  • Using the wrong recipe that has too many eggs will result in an eggy brownie.
  • Good quality chocolate will always mask whatever egg flavor you are getting in the brownies.

Why don’t my brownies have clean edges?

  • Not resting the brownies before cutting may result in uneven edges.
  • Dip the knife in hot water before cutting the brownies.
  • After adding the batter to the baking dish before baking, clean up the edges using a piece of tissue.

What to do with failed brownies?

  • Make brownie pops
  • Make brownie crumbs by crumbling it and baking it. Add it to your ice creams and shakes.
  • Cut it up, drizzle chocolate sauce and a scoop of ice cream
