A little about the beauty of no-knead bread:

This blog would be pointless if I don’t explain a little about it. Jim Lahey wrote a book called “My Bread: The Revolutionary No-Work, No-Knead Method”. It talks about a unique way of making bread: you don’t knead the dough to create gluten. Gluten is developed through a long rise time given to the dough. The dough has significantly higher amounts of moisture that naturally results in gluten formation over a long period of time.

What equipment do I need to make a no-knead air fryer bread recipe?

A set of teaspoons and tablespoons: This stainless steel measuring spoon set is perfect. I use the one that my pastry college provided to me. I did use the plastic ones but let me tell you, they may look boring but stainless steel is best for long-term and safe use.

Big Bowl: I use this one because it reflects the light when I shoot videos and you also get to see all the ingredients. It can also be used in the microwave.

Chopping board: I bought my chopping board from a fair in Shantiniketan but I found something similar online. You can check this one out here.

Weighing Scale: Not everything good is costly and this weighing scale is perfect for weighing for all your recipes. I have been using this one for 6 years and then it broke because well I dropped it by mistake. You would think, I bought one after that but no. I decided to use a tape and kept using it for 6 more months until it finally gave up and I had to buy another one.

Spatula: Trust me when I say, you need this silicon spatula. It’s the best thing ever! Nothing, I repeat nothing can clean your bowls the way a spatula cleans it. Also bonus points, it’s heat resistant, dishwasher safe, and has no cracks and crevices, so it’s easy to clean.

Balloon Whisk: This balloon whisk has a good grip, and rounded tip for better whisking. i don’t use this because I already got balloon whisks when I got my toolkit from college but this one’s a good whisk.

Pastry brush for milk wash. You want to avoid using a wooden brush oven here. Why? Because your bread is all proofed and happy and you don’t want to use a rough pastry brush and punch a hole in there! This brush will be gentle on the dough and get the job done.

Dough scraper for portioning dough. This is essential while making bread. The one that I use is from my college days, so you can see, it really is a one-time investment. I am linking this one over here because it is stainless steel, so the chances of it getting bent are very low. Use it to clean your hands and table while making the dough, cut out portions of dough, lift the dough, and even shape high-hydration dough.

What ingredients do I need to make a no-knead air fryer bread recipe?

All Purpose Flour

Let me tell you this, you can get beautiful bread using all-purpose flour too. That being said you can use bread flour too to get even better results. You can use this one. I used regular AP flour to make this bread and it gave me an amazing crusty rustic bread. Flour is providing me gluten which will help in making the structure of the bread.

Yeast

I am using active dry yeast in this recipe, which is a dried form of yeast that needs to be hydrated to activate. If you have instant yeast, use half the amount for this recipe. Instant yeast does not require any activation. This ingredient is important in giving bread its classic flavor and rise.  Yeast feeds on sugar to create alcohol and carbon dioxide, which is why honey is mixed to provide the yeast with some sugar. Instant yeast is also available in markets that do not require any activation.

Honey

Honey is used to provide sugars to the yeast for feeding.

Salt

Imagine if your bread kept rising and finally burst, fun? Not much when you want to have bread. Salt is what controls the fermentation of yeast, it also makes the gluten strands stronger.

Water

Water helps in dissolving all the ingredients and helps in making the dough by creating gluten.

Refined Oil

We require oil just for greasing the bowl so use as much as required to lightly grease the bowl.

How to make a no-knead air fryer bread recipe?

Pre-prep

Sieve the flour and salt in a bowl. Keep a bowl greased with oil ready to store the bread.

Activating the yeast

If you are using instant yeast, skip this step. If you are using active dry yeast like me, then in another cup or bowl, mix the yeast, milk, and sugar. Stir to mix well and dissolve the sugar. Cover and let the yeast activate for 5 to 10 minutes.

Don’t have yeast, no worries, make this no-yeast bread and come back to this recipe later.

Here you are waiting for the yeast to feed on the honey, break it down and produce carbon dioxide and alcohol. When the yeast is activated, you will see bubbles on the mixture.  You can see the carbon dioxide in the form of bubbles in the mix and you can smell the alcohol.

Making the dough

Once the yeast mix is bubbly and frothy, add it to the sifted and measured flour.

Mix it well with a spatula to make a sloppy dough. This, right here, is the best part about no knead bread.

Pour a generous amount of refined oil into a bowl and drop the dough in. Cover it with plastic wrap and put it in the fridge for at least 8 hours. Make sure you don’t cover it with a damp towel, or you will end up with skin on the dough’s surface.

I kept mine for 12 hours. You can leave for up to 24 hours.

Proofing

Take out the dough and fold it from four sides. Refer to this video, to see how it is done. The dough is sticky, so wet your hands lightly to avoid that.

Now, create a bowl shape with a smooth top by tucking the edges on one side. Pinch the seam to make sure it is sealed.

I used a ceramic bowl, you can use any bowl that is ovenproof and will fit your air fryer.

I lined this bowl with baking paper and placed the dough ball in it, seam side down.

Place them in a warm place and bake until they have doubled in size. Mine took an hour to double up in size. [Note: it was a hot and humid day]

Add water to the base of the air fryer.

Preheat the air fryer to 200 degrees Celsius/392 degrees Fahrenheit for 10 minutes. I stay in Kolkata, India which is typically hot in summer months. Adjust the time based on where you are staying.

Baking

Now score the dough using a blade or lame. What is lame? A lame is a sharp blade used specifically for scoring bread. You can purchase it here or make one yourself. My chefs taught me this one, they would just pass a bamboo stick through the two holes on either side of the blade. This bent the blade like the letter “C” and made a DIY lame for us.

Take the bread out gently by holding the edges of the baking paper and place it on the air fryer rack.

Bake your bread at 200 degrees Celsius/392 degrees Fahrenheit for 25 minutes. Turn it upside down and bake it for 5 minutes more.

Every oven is different, so check after 15 minutes.

You will know it is done when it is golden brown on top.

Slice it up and have it as is or make a beautiful sandwich out of it.

  • Water: 100 ml
  • Honey: 1/4 tsp
  • Yeast: 1 gram
  • Salt: 2 grams
  • Refined Oil: For greasing
