Ingredients to make Coffee Cake with vanilla and cinnamon streusel
I simply mix some melted butter, sugar, flour, and cinnamon powder for the streusel. Conventionally. Chilled butter is preferred. I tried it with melted butter, and the streusel looked good. Streusels usually prefer using brown sugar, but I used regular grain sugar to make it a vanilla streusel. You are also going to need some cinnamon powder to impart some flavor.
For the coffee cake, you will need basic ingredients like flour, butter, and sugar. I have used buttermilk to add a good flavor to the cake. I have given an easy recipe to make some homemade buttermilk using the ingredients below. The baking powder will make the cake rise and make it light and fluffy.
Procedure to make Coffee Cake with vanilla and cinnamon streusel
- Mix all the ingredients for the streusel into a crumbly mix. We are not dissolving the sugar but just mixing it to form a crumbly texture.
- Place the streusel in a bowl, cover, and refrigerate.
- To make the buttermilk, stir together milk and vinegar and let it sit for five minutes.
- Line an 8.5 x 4.5 x 2.75-inch cake tin using butter paper in the base. Grease the rest of the tin using oil.
- Preheat your microwave at 180 degrees Celsius/ 356 degrees Fahrenheit in a convection setting.
- In a separate bowl, sift the flour and the baking powder.
- In another bowl, beat the butter and sugar till the sugar dissolves completely.
- Add the egg and continue beating.
- Now add the buttermilk and vanilla essence.
- Add the coffee liquor. You can add more coffee powder if you want a stronger flavor, but this amount balances pretty well.
- Beat to mix it well. Add the flour gradually and fold it in the batter using a spatula.
- Make sure you fold in gently only till the time that there are no more lumps.
- Do not overmix. Pour the batter into the cake tin and tap gently to remove any air bubbles.
- Add the streusel mixture evenly on top. It will seem like a lot, and it is, but we are here for more streusel.
- If you want a thinner layer, you can do so by reducing the amount of streusel on top. This will affect the sweetness of the overall cake but should not be a major problem.
- Place it in the preheated convection oven at 180 degrees Celsius/ 356 degrees Fahrenheit in a convection setting for 30 minutes.
- Check once after 30 minutes by poking a skewer or a knife. If the knife comes out clean, your coffee cake is done
- Let it cool for a while before taking it out of the cake tin, It should gently slide out.

Ingredients

- Grain Sugar- 70 gm
- Cinnamon powder- 1/2 tsp
- Butter (melted) - 56 gm
- Flour- 70 gm
- For the coffee cake
- Flour- 75 gm
- Baking powder- 1/2 tsp
- Butter (softened) - 28 gm
- Sugar- 50 gm
- Egg- 1 (50gm)
- Vanilla essence- 1/2tsp
- Buttermilk- 15 ml/ 4tbsp (Homemade buttermilk -Milk-15 ml -Vinegar- 1/4 tsp Mix and let sit for 5 minutes)
- Coffee liquor made using 2 tbsp coffee powder and water
