What ingredients do I need to make chia seed coconut pudding?

Sugar

Sugar adds sweetness to the pudding, balancing the flavors and making it more enjoyable. It also helps enhance the overall texture and creaminess of the pudding.

Chia Seeds

Chia seeds are the star of this recipe, providing a unique gel-like texture when soaked in liquid. They absorb the coconut milk and thicken the pudding, creating a satisfying and pudding-like consistency. Chia seeds are also packed with nutrients like fiber, protein, and omega-3 fatty acids, adding a healthy boost to your dessert.

Coconut Milk

Coconut milk forms the creamy base of this pudding, imparting its rich and tropical flavor. It adds a luscious texture and a hint of natural sweetness. Coconut milk is not only delicious but also offers numerous health benefits, such as providing healthy fats and minerals.

Corn Starch

Corn starch acts as a thickening agent, ensuring the pudding reaches the desired consistency. It helps stabilize the mixture, preventing it from becoming too runny. Corn starch also contributes to the smooth texture of the pudding, making it even more delightful to eat.

How to make chia seed coconut pudding?

Mix the chia seeds in the coconut milk: In a bowl, combine the chia seeds and coconut milk. Stir well to ensure the chia seeds are evenly distributed. Allow it to sit for about five minutes.

Give it a mix again: After five minutes, give the mixture another stir. This will help prevent any lumps from forming and ensure the chia seeds are well incorporated.

Pour it into a serving bowl: Choose a bowl or container where you’d like to serve your pudding. You can get creative and use a cleaned and dry coconut shell, like I did for a tropical touch.

Refrigerate for 30 minutes: Place the bowl in the refrigerator and let it chill for about 30 minutes. This will allow the chia seeds to absorb the liquid and form a gel-like texture.

Prepare the coconut pudding: In a saucepan, heat the coconut milk over medium heat. Add the sugar and stir until it dissolves completely.

Create a corn flour slurry: In a separate bowl, mix the corn flour with some water to create a slurry. This will help thicken the coconut milk.

Add the slurry to the coconut milk: Pour the corn flour slurry into the saucepan with the heated coconut milk. Whisk vigorously to prevent any lumps from forming. Continue whisking until the mixture thickens to a pudding-like consistency.

Cool and pour over the chia seed layer: Allow the coconut pudding mixture to cool slightly. Then, pour it over the chilled and gelled chia seed layer in your serving bowl.

Refrigerate overnight: Cover the bowl and refrigerate overnight, or for at least a few hours, to allow the pudding to set and the flavors to meld together.

Garnish and serve: Before serving, you can garnish your Chia Seed Coconut Pudding with slices of fresh coconut or any other desired toppings. Get creative and make it visually appealing!

Now, you’re ready to enjoy this creamy and sweet vegan dessert. Each spoonful will delight your taste buds with the combination of coconut milk, gelled chia seeds, and the luscious coconut pudding layer. Make sure to refrigerate it overnight for the best results.
