Healthiest 3 ingredient oat banana cookies may not scream delicious but it sure sounds healthy. Let me be honest before you decide to read on. These cookies are not a replacement for your favorite brown butter chocolate chunk cookies, okay? These cookies are meant to be baked when you are craving cookies but not that bad. When you have been eating healthy and don’t want it all to come crashing down for just a cookie (which btw is totally fine, because you only live once). Anyway, these cookies aren’t that intense puddle of delicious nutty flavors but it is instead a chewy and not overly sweet cookie. I drizzled some chocolate on top because, cmonnn, I’m eating oats and bananas here anyway.

What equipment do I need to make oat banana cookies?

A set of teaspoons and tablespoons: This stainless steel measuring spoon set is perfect. I use the one that my pastry college provided to me. I did use the plastic ones but let me tell you, yes they may look boring but stainless steel is best for long-term and safe use.

Big Bowl: I use this one because, when I shoot videos, it reflects the light and you also get to see all the ingredients. It can also be used in the microwave.

Baking Tray: My sister uses this baking tray and she loves it. I use a round baking tray and sometimes find myself complaining about not having a rectangle or square tray, so I thought I’ll link one over here.

Weighing Scale: Not everything good is costly and this weighing scale is perfect for weighing for all your recipes. I have been using this one 6 years and then it broke because well I dropped it by mistake. You would think, I bought one after that but no. I decided to use a tape and kept using it for 6 more months until it finally gave up and I had to buy another one.

Oats

The oats is the structure builder in this recipe. It provides the starch that absorbs the moisture and swells up creating the body of the cookie.

Banana

The primary role of banana here is to provide sweetness as we are using overripe bananas. The bananas as they ripen turn the starches into sugars making them softer and sweeter just like you! Aww.

Cinnamon

Added to bring a burst of flavor to the cookies.

Salt

Added to balance out the sweetness of bananas.

Dark Chocolate

It looked visually unappealing for me to pick it up and snack on it. So I drizzled dark chocolate and it worked wonders. I also sprinkle some sea salt on top. I use this Himalayan pink sea salt.

How to make 3 ingredients Oat Banana Cookies?

  • Start off by measuring all the ingredients.
  • You see the bananas I used? Yes they were not over ripe. I pricked using a fork and put that in the microwave for 2 minutes. It turned black and was a hot mess. Not the idea way, I know, nature will always do that process of ripening better. But this is a good way to speed it up.  We are using heat here to turn the bananas ripe.
  • Using a blender or a fork mash it really well and add it to the oats.
  • Add the salt and cinnamon powder and mix well.
  • Your cookie dough is ready.
  • If it feel like a liquid, add some more oats.
  • Preheat the oven to 180 degree centigrade or 356 Fahrenheit. Do it while the dough is resting so that by the time you shape your cookies, your oven is already heated up.
  • Let it sit for 15 minutes so that the oats can soak up some moisture and swell up. This makes the process of shaping the cookies easier.
  • Now grease or line a baking tray. I’m sharing a similar baking tray here.
  • Make roundels each weighing 30 grams and place them on the baking tray. Now it will not rise or spread out because we have not added any leavening agent or sugar or butter.
  • I was craving chewy cookies so I made thicker roundels. My dad was complaining and hated it, so if you are team thin and crispy, just flatten it more.
  • Bake for 30 minutes at 180 degrees centigrade or 356 Fahrenheit. I checked it at 20 minutes once.
  • Temperature and time may vary slightly from oven to oven. Every oven is different therefore I always recommend keeping a check at least ten to fifteen minutes prior to your total baking time. Also note that my cookies were thicker, thin flat cookies should take around 15 to 20 minutes to bake.
  • Once it cools down, melt and drizzle some dark chocolate on top. Sprinkle some sea salt and your oats cookies are ready!
