Strawberry and Kaffir lime Overnight Oats was inspired when I was doing my internship in hotel management. While working as a trainee in the Oberoi Grand, Kolkata, I came across one of their signature desserts- Kaffir Lime creme brulee. It was flavored using kaffir lime leaves which are abundant in West Bengal. When trying to come up with an overnight oats recipe, I thought about using kaffir lime zest with stone strawberries. The result was a creamy, tangy, yet refreshing oat that you can have as a quick breakfast or dessert.

What equipment do I need to make strawberry overnight oats?

A small bowl or a mug

A set of teaspoons and tablespoons

What ingredients do I need to make strawberry and kaffir lime overnight oats?

Firstly, you will need oats (I use instant oats, which are readily available and easy to cook. Click here to read more.) and milk and yogurt to soak the oats in. These three ingredients form the main body for the overnight oats. The oats absorb milk and yogurt and swell up. However, you can choose to use any plant-based product too.

Secondly, to make strawberry and kaffir lime oats, you will need strawberries. Select firm, fresh strawberries. In case kaffir lime is not available in your region, you can replace that with regular lime zest. The fragrance of kaffir lime would be missing, but it works.

Thirdly, I have used honey to provide sweetness to the oats. I am not saying honey is low-calorie, but it is a better choice than sugar.

How to make this overnight oat?

In a mug or a small bowl, start by adding washed and chopped strawberries.

Now add the oats. Use any oats of your choice.

Add the milk and yogurt. I am using a mix of milk and yogurt to get that perfect creamy consistency.

Next, we will add the chia seeds.

Add the zest of kaffir lime and honey. Kaffir limes are also called “Gondhoraaj” or “King of Aromas” in Bengali. These are not very juicy but are abundantly fragrant and similar to Thai kaffir lime.

Give it a mix, making sure it has combined well.

Cover and refrigerate overnight, or at least let it soak up for 6 hours.

To finish it off and make it a little more fun, I decided to make a caramel, but you can skip this step.

For the caramel, heat the sugar and keep stirring using a wooden spatula. This is called making dry caramel, where no moisture is added.

Make sure that the sugar is getting colored evenly.

Once it turns golden brown in color, pour it on the oats and swirl around super quick to get a thin, crisp layer.

It will be set in minutes. Slice up some strawberries and arrange them nicely on the side. Sprinkle some chia seeds, and there you go.

Your pretty and refreshing overnight oats are ready.

The ideal time to soak the oats is at least 3 to 4 hours. You can simply keep it overnight. It is done when it has soaked up all the moisture and has become similar to a thick pudding.

Usually, you consume it chilled. However, if you want, you can heat it by stirring it in intervals.

-Can I pack and carry overnight oats?

Absolutely. That is what I love about these oats. Just pack it in an air-tight container, and you can carry it as lunch, too.

-Are overnight oats healthy?

Yes, it is healthy!

-Will overnight oats expand?

No, it will soak up the liquid and become thick like a thick pudding.

  • Instant Oats: 6 tbsp
  • Washed and chopped strawberries: 2 tbsp
  • Milk: 3 tbsp
  • Yoghurt : 3 tbsp
  • Chia seeds: 1 tsp
  • Kaffir lime zest: 1/2 tsp
  • Honey: 1 tbsp
  • For caramel:
  • Castor sugar: 75 grams
  • Strawberries for garnish
Directions
  • Step 1 In a mug or a small bowl, start off by adding washed and chopped strawberries.
  • Step 2 Now add the oats.
  • Step 3 Add the milk and yogurt.
  • Step 4 Next we will add the chia seeds.
  • Step 5 Add the zest of kaffir lime and honey.
  • Step 6 Give it a mix making sure it has combined well.
  • Step 7 Cover and refrigerate overnight or at least let it soak up for 6 hours.
  • Step 8 For finishing it off and to make it a little more fun, I decided to make a caramel you can totally skip this step.
  • Step 9 For the caramel, heat up the sugar and keep stirring using a wooden spatula. 
  • Step 10 Make sure that the sugar is getting colored evenly. 
  • Step 11 Once it is golden brown in color, pour it on the oats and swirl around super quick to get a thin crisp layer.
  • Step 12 It will be set in minutes. Slice up some strawberries and arrange them nicely on the side. Sprinkle some chia seeds and there you go
