In this Tiramisu recipe without alcohol, we make our ladyfingers from scratch instead of running to stores to get one. What equipment do I need to make a Tiramisu recipe without alcohol?

This set of teaspoons and tablespoons is what I have been using for years now. They always come in handy when I need to measure smaller portions. Precise measurements are key to achieving a great recipe.

A few big bowls to mix the dry ingredients, and also for the sabayon.

Electric Beater or Stand Mixer: There is a lot of whipping and paddling in this recipe which will require a good quality Electric Beater or Stand Mixer. I have always used KitchenAid stand mixers at work and would like to recommend the same. It is extremely durable, and strong and gets the job done efficiently.

Piping Bag with Round Tip: To pipe the ladyfinger biscuits.

Spatula:  It helps fold the cream, mascarpone, and sabayon.

Sieve:  To make sure you have a lump-free dry mix ready for your ladyfinger biscuits.

Parchment Paper: Use parchment paper to keep the ladyfingers uniform and evenly sized.

Baking Sheet:  A baking paper is used to bake the ladyfingers.

Kitchen Thermometer:  To get the correct temperature for the syrup.

Saucepan:  It is used to heat the sugar and water.

Baking Dish:  To assemble the Tiramisu. You can use this baking dish. It has lasted me very long and I have made some wonderful recipes like below using the same baking dish. Check the recipes below and in the recommended recipes if you want to try them.

What ingredients do I need to make a Tiramisu recipe without alcohol?

For the Ladyfingers:

Egg White

It provides aeration and structure to our ladyfinger biscuits making them crispy and soft in the center. The presence of albumin protein in egg white helps trap all the air while the egg white gets whipped.

Castor Sugar

It helps in stabilizing the whipped egg white foam which enhances the structure and texture of the ladyfinger biscuits. It also adds subtle flavor.

Egg Yolk

Egg yolk helps in adding richness and flavor to the biscuits. It also helps bind the flour.

Flour

Helps in creating a light structure for our ladyfingers. Once assembled it will help soak up the flavors of the Tiramisu without making the ladyfingers soggy.

Corn Flour

I have used both flour and cornflour as they help maintain the perfect crunchy texture on the outside and soft texture on the inside. It will also make the gluten strands shorter.

Vanilla

They are used here to flavor the ladyfinger biscuits.

For the Tiramisu:

Whipping Cream

Provides light airy and creamy texture in the layers when you gorge on the deliciousness. In making the sabayon it adds richness and doubles up in volume.

Water

It is used for making the sugar syrup for the sabayon.

Sugar

It helps add sweetness to the dessert while cutting out any bitterness from the coffee.

Egg Yolk

Gives a rich creamy layer to the Sabayon, and as we are not using raw eggs this yolk gets cooked with the sugar syrup.

Mascarpone

Balances the flavors of the Tiramisu with a slight tanginess and also imparts a luxurious, creamy texture, making our no alcohol Tiramisu recipe a masterpiece.

Coffee

It can’t be Tiramisu, if there ain’t any coffee. We need dark strong coffee to bring out the classic Tiramisu flavor. We will dip the ladyfinger biscuits in the coffee while assembling our Tiramisu.

Water

To make the coffee syrup.

Step by Step procedure to make Tiramisu recipe without alcohol:

Prepare the Ladyfinger Biscuits for Tiramisu recipe without alcohol a day prior

Start by whisking the egg whites using a hand mixer or stand mixer with the whisk attachment on medium speed until they become foamy.

Once foamy, gradually add half of the caster sugar while continuing to whisk. After adding the sugar, add the remaining half and whip the mixture at medium speed until it forms soft peaks.

Gently add the egg yolks, one by one, into the whipped egg whites while continuing to mix. Add vanilla extract. Next, fold in the dry ingredients (flour and cornflour) in two parts – first, add ⅔ of the dry mixture, then fold in the remaining ⅓. Gently fold making sure the batter does not get flattened and lose its fluffiness.

Before piping, draw lines on parchment paper according to the size of your baking dish. This ensures the ladyfingers fit your baking dish when assembling the tiramisu.

Use a large piping bag with a medium nozzle, or cut the end by half an inch. Quickly and gently pipe the batter onto the parchment paper. Dust icing sugar on top for a hint of sweetness as well as some color.

Bake: Bake at 180°C or 350°F for 10-20 minutes (depending on your oven). Mine took 25 minutes – keep an eye on them, they should be done when the edges turn golden.

Once baked, let the ladyfingers cool completely. Store them in an airtight container overnight. The ladyfinger biscuits are all crunchy on the outside with a sponge cake-like light and airy feel in the middle ready to soak up all the goodness from the tiramisu.

Prepare the Tiramisu

Using a stand mixer with the whip attachment, whip the egg yolk on medium speed until it forms firm peaks.

Make the Sabayon

While the egg yolk is getting whipped, start by heating water and sugar in a small pan until it reaches 122°C. While the syrup is heating, start whisking the egg yolks on medium speed.

Once the syrup reaches temperature, slowly pour it into the egg yolks while continuing to whisk. This creates a silky, mixture that will more than double up in size. This is known as a Sabayon.

Once the Sabayon is made, keep it aside.

Prepare the Mascarpone

Lightly paddle the mascarpone until it’s smooth and creamy. If it’s firm, heat it slightly to achieve a smooth consistency that can easily be spread.

Make the Coffee Syrup

Brew strong coffee using 10 g coffee powder and 150 ml hot water. Sweeten it with sugar and add vanilla extract to taste.

Mixing the Creamy Layers

Gently fold the sabayon(egg yolk mix) into the mascarpone, then fold in the whipped cream. The mixture should be light and airy, with a luscious texture.

Assemble the Tiramisu

Quickly dip each ladyfinger into the coffee syrup, letting it soak up some of the flavor without getting soggy.

In an 8 x 8 cm dish, arrange a layer of dipped ladyfingers. Spread a generous layer of the mascarpone creamy mix on top. Repeat with another layer of ladyfingers followed by more cream.

Once assembled, cover and refrigerate the tiramisu overnight to allow the flavors to intensify.

Serve and Enjoy
