Coconut milk is creamy, has a slightly nutty taste, and adds flavor to our black rice and coconut pudding recipe without overpowering. It also helps cook the rice.

Water/coconut water helps in cooking our rice evenly because if we only use the milk it may evaporate and burn easily leaving the rice half-cooked which will be too heavy for the palate and I would not recommend it. This is also one of the reasons it was kept a secret and is called forbidden rice and only the wealthy and royalty were allowed to eat it to ensure they have a healthy and long life.   2. Drain water the next morning. By soaking the rice we are ensuring that the rice is cooked well and that you get a perfect sticky rice pudding texture.
  3. Take a heavy-bottomed saucepan and add coconut milk, water, or coconut water, and the soaked and drained black rice. Cook the ingredients over medium heat and keep stirring in between.
  4. Once you see a boil, lower the heat and cook till the rice turns squishy and soaks all the moisture. Check for tenderness and softness by squishing a grain of cooked rice under your fingertips.
  5. Keep stirring in between to ensure that the rice does not stick to the saucepan.
  6. Once the rice is cooked, it is now time to give this recipe a hint of sweetness and bring out flavors by adding brown sugar, cardamom, and salt. Cook for a few minutes until you’re sure that the sugar has dissolved and you smell the delicious aroma of cooked rice in coconut milk wafting through your kitchen.
  7. Turn off the heat and serve the delicious and fragrant forbidden rice pudding hot or cold in bowls and drizzle with coconut milk and a touch of sliced mangoes to make this more awesome.
